- Maple syrup
- Dijon mustard
- Thyme
- Salt
- Pepper
Cut out the bird's backbone, and using the palms of your hand squash flat. Make up the marinade as you go along, but I would highly recommend trying out maple syrup (worked a treat) and potentially some chilli. Leave in the fridge overnight, or as long as possible.
Get the BBQ up to full power, and cook for five minutes on both sides. As always leave to rest and enjoy the tastiest grouse ever.
