I bagged a couple of pigeons on beater's day and knew exactly what I was going to do with them. Simple and quick recipe which gives chicken a run for its money.
- Pigeon Breasts (2 per person)
- Red and Green Pepper
- Red Onion
- Paprika
- Cumin
- Lime
- Tortillas
Cut the onion and peppers into thin strips and place in a bowl, in another bowl place strips off pigeon breast. Add some paprika, cumin, lime juice and seasoning to both bowls and give a good shake.
Add the peppers and onions to a hot wok first, for about five minutes. Then add the pigeon breasts for the another five minutes, turning often.
Warm up the tortillas and prepare your additional condiments. We enjoyed it with some salad and salsa. However, a little bit of horse radish or something similar would have worked extremely well with it...
