Place some butter in the cavities of the partridge.
Season and sear the partridge in a hot pan on all sides and roast in a hot oven 220ºC for 10 minutes.
Baste with the butter during cooking.
Cook the leeks and prunes in the butter and season well.
Remove the partridge from the oven and allow to rest for 10 minutes before serving.
Serve with the leeks and maybe some watercress.
