Ingredients
4 venison steaks
4 goose eggs
400g blanched chunky chips
Milled salt & pepper
Method
- Bake the chips in a hot oven after blanching
- Season the steaks and sear in a hot pan
- Cook for two minutes each side and rest for a minimun of five minutes
- Fry the duck eggs individually in little rosti pans
- Place the steak, chips and egg pan on a plate and serve
